Free recipe Friday 9


I had kind of gotten out of focus these last few weeks. I just read Stamps blog and realized that people actually know that i do ON My Mind Mondays and Free Recipe Friday. That gives me reason enough to stay the course. Thanks for noticing. Buoyed my spirits. (can't believe i said that)

So, since i have been on this low sugar low carb thing..... I thought i would give you my new favorite breakfast. It is a whole Wheat blueberry pancake. I know.... pancake:so not low carb or sugar. But Wait. On the diabetic diet, any number of grams of fiber in a serving, takes that many grams of carbs out. So they cancel each other out. I ended up getting a wheat grinder for my birthday, and have used whole wheat not white flour religiously. And after 2-3 of these for breakfast, I'm am full until noon. And, they are great with out any syrup. I just butter them. And on this diet.... fat is okay. Plus it makes this sweet (from blueberry) and salty (from butter) yummyness.

So.

1 cup whole wheat flour

1 cup buttermilk or milk

1 egg

1 TBS sugar

1/2 tsp baking powder and soda

1 tps vanilla.

1 cup blueberries. I use fresh when i can get them, but any frozen berry will do.

I have also mashed 1 cup banana into it, and it is so good.

I also have a wheat grinder and am always on the look out for new ways to use it. So thanks for the new idea.
