This is a broccoli cheese souffle. Here's the recipe.Heat 2 TBS add 2 TBS flour and 1/2 tsp salt. add 1/2 cup milk to make a rue. Remove from heat. Mix in 1/4 cup Parmesan and 1/4 cup Swiss and stir until smooth.
Beat 4 yolks until lemon color add 2 cups cooked broccoli ( I steam fresh broccoli, but you can use frozen) add to cheese and flour.
Beat 4 eggs whites until they are stiff peaks. fold in to yolks and pour into an ungreased souffle dish. Bake at 350 for 40 minutes until cooked thoroughly.
I love puzzles,. My kids have learned from years of my puzzle doing, not to touch. 5 of 6 struggles when I first bring the puzzle out. But by the time it's been out for 2-3 days, she looses interest.
